Microbiological investigations in butters

Abstract

 366 samples of butters from different places were examined. The total percentage of germe in the coliform group was 45,6% in all the butters examined. Escherichio. coli was found in 92 samples, 25,1% Escherichia freundii in 12 samples, 3,2%; A aerogenes in 57 samples, 15,5%, and A cloacae was identified in 15 samples, 4%. In 250 samples the total flora count was less than 30 million germs per gramme, and in 116 samples it was more than 30 million germs per gramme.
