Its determination in eggs and in egg-containing products

Abstract

We have studied in this work the problem of the determination of the amount of eggs in alimentary pastes. We have made analysis in 18 "biscoito" and 16 "macaroni" and the results in these analysis give to us the permission to say that the determination of amount of eggs in alimentary pastes in accord of the technic described is of great accurance.
